Indulge in these delightful Almond Croissant Puff Pastry Swirls, a perfect blend of flaky puff pastry and a rich almond filling. Garnished with almond slices and fresh berries, these swirls are dusted with powdered sugar and brushed with creamy butter for a decadent treat that’s ideal for breakfast, brunch, or an elegant dessert.

Ingredients

Scale

Puff Pastry

  • 2 sheets puff pastry (500g each), thawed if frozen
  • Heavy cream, for brushing
  • Almond slices, for garnish
  • 14 cherries or fresh berries, for garnish
  • Powdered sugar, for dusting

Almond Filling

  • 4 oz unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure almond extract
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups almond flour
  • Zest of 1 lemon or orange

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s at the perfect temperature for baking the puff pastry swirls.
  2. Prepare Puff Pastry: Roll out the thawed puff pastry sheets on a lightly floured surface to smoothen and slightly stretch them, then brush both sheets lightly with heavy cream for a beautiful golden finish.
  3. Mix Almond Filling: In a mixing bowl, combine melted unsalted butter, granulated sugar, eggs, almond extract, vanilla extract, almond flour, and the zest of lemon or orange. Stir until you achieve a smooth, creamy almond mixture.
  4. Assemble Swirls: Spread the almond filling evenly over one puff pastry sheet. Place the second sheet on top and gently press down to adhere the layers together.
  5. Cut and Shape: Slice the layered pastry into strips, then twist each strip slightly and coil into individual swirls or circles on a parchment-lined baking tray.
  6. Brush and Garnish: Brush the tops of the swirls with additional heavy cream or melted butter, then sprinkle almond slices over each swirl for a crunchy, nutty garnish.
  7. Bake: Place the baking tray in the preheated oven and bake for 20-25 minutes, or until the swirls are puffed, golden, and cooked through.
  8. Cool and Garnish: Once baked, remove from the oven and allow to cool slightly on a wire rack. Dust with powdered sugar and decorate with fresh cherries or berries for a beautiful presentation.
  9. Serve: Serve these almond croissant puff pastry swirls warm or at room temperature with coffee or tea.

Notes

  • Ensure puff pastry is fully thawed before handling to prevent cracking.
  • For extra almond flavor, you can sprinkle a little powdered sugar mixed with almond extract over the filling before baking.
  • Use fresh seasonal berries for garnish to add a pop of color and freshness.
  • Store leftovers in an airtight container for up to 2 days; reheat briefly in the oven to retain crispiness.
  • You can substitute lemon zest with orange zest depending on your flavor preference.
