Ingredients
Scale
Salmon and Seasoning
- 2 fillets fresh Salmon
- 1 tsp Salt
- 1 tsp Pepper
Spinach Mixture
- 1 cup Spinach, thawed and drained
- 1 medium Onion, sliced
- 2 cloves Garlic, minced
- 1 cup Sour Cream
- 1 cup Mozzarella, shredded
- 1 tbsp Olive Oil, for sautéing
Instructions
- Preparation: Gather and prepare all ingredients. Slice the onion, mince garlic, and thaw then drain the spinach so it’s ready for cooking.
- Sauté Onions and Garlic: Heat olive oil in a skillet over medium heat until shimmering. Add sliced onions and sauté for 3-4 minutes until translucent. Then, add minced garlic and cook for about 30 seconds until fragrant, ensuring not to burn the garlic.
- Cook Spinach Mixture: Add the thawed and drained spinach to the skillet with onions and garlic. Stir gently for 2-3 minutes until heated through and moisture evaporates. Season with salt and pepper, then stir in sour cream thoroughly to combine into a creamy mixture.
- Preheat Oven and Sear Salmon: Preheat oven to 175°C (347°F). Season both sides of the salmon fillets with salt and pepper. In a hot skillet, sear the salmon on each side for about 2 minutes to get a slightly crispy crust.
- Assemble Dish: Grease a baking dish and place the seared salmon fillets skin-side down. Spread the creamy spinach mixture evenly over the salmon. Sprinkle shredded mozzarella cheese generously on top.
- Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes until the salmon is opaque, flakes easily with a fork, and the mozzarella cheese is golden and bubbling.
- Rest and Serve: Remove from oven and let the salmon rest for a couple of minutes. Serve the baked salmon topped with the creamy spinach and melted mozzarella. Optionally, add a squeeze of fresh lemon for enhanced flavor.
Notes
- Serve with a squeeze of fresh lemon juice to add brightness and enhance flavors.
- Ensure spinach is well drained to prevent excess moisture in the dish.
- Use fresh mozzarella for a creamier topping or shredded mozzarella for easier melting.
- Adjust seasoning as desired, especially if using salted cheese.
- Can be paired well with steamed rice, quinoa, or crusty bread for a complete meal.
