Instructions

  1. Prepare the sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, hot sauce, and honey. Stir well until smooth and refrigerate until ready to serve to let flavors meld.
  2. Make the batter: In a medium bowl, whisk together the flour, cornstarch, garlic powder, smoked paprika, salt, and black pepper. Add the hot sauce, egg, and buttermilk, whisking until you have a smooth batter without lumps.
  3. Coat the shrimp: Add the cleaned shrimp to the batter and toss gently to ensure each piece is evenly coated. Set aside to let the batter adhere to the shrimp.
  4. Prepare the breading: Pour about one cup of Panko breadcrumbs into a separate shallow bowl or plate for coating the shrimp.
