Description

These BBQ Chicken Sliders are a perfect combination of tender shredded chicken coated in tangy barbecue sauce, topped with crunchy purple cabbage and spicy pickles, all nestled inside soft Hawaiian slider rolls. Baked until the tops are crispy and garnished with Parmesan and fresh cilantro, these sliders are a delicious and easy crowd-pleaser ideal for parties or casual meals.

  • 12 Hawaiian slider rolls
  • 3 cups shredded cooked chicken
  • to 1 cup barbecue sauce (start with ⅓ cup, add more as needed)
  • 1½ cups purple cabbage, chopped
  • ¼ cup spicy pickles, chopped
  • 1 tablespoon butter, melted
  • 1 tablespoon Parmesan cheese, grated (for garnish)
  • 1 tablespoon fresh cilantro, finely chopped (for garnish)

Optional Pickled Onions

  • 1 medium red onion, very thinly sliced
  • ½ cup water
  • ¼ cup distilled white vinegar
  • ¼ cup apple cider vinegar
  • 1½ tablespoons maple syrup
  • ½ teaspoon salt

Instructions

  1. Preheat and mix chicken: Preheat your oven to 350ºF. In a medium-sized mixing bowl, combine the shredded cooked chicken with barbecue sauce, stirring well to coat all pieces evenly.
  2. Prepare the rolls: Slice the Hawaiian slider rolls in half horizontally, creating a sheet of bottom rolls and a sheet of top rolls. For easier slicing, allow the rolls to sit out for a few minutes to dry slightly.
  3. Assemble the base: Place the bottom halves of the rolls in a 9×9 inch or similar baking dish. Optionally, drizzle a little mayonnaise or Kewpie mayonnaise over the bottoms for added creaminess. Spread chopped purple cabbage evenly over the bottom rolls, then layer the barbecue chicken mixture on top.
  4. Add pickles and toppings: Evenly sprinkle the chopped spicy pickles along with any additional toppings you desire such as pickled onions or extra cilantro over the chicken layer. Place the top halves of the slider rolls over the assembly, completing the slider stack.
  5. Butter and bake: Brush the tops of the assembled sliders with melted butter and sprinkle grated Parmesan cheese over them. Cover the baking dish tightly with foil and bake in the preheated oven for 20-25 minutes, or until the tops are slightly crispy and browned.
  6. Serve: Remove the sliders from the oven and let them cool for a few minutes. Using a sharp knife, cut into individual sliders. Garnish with freshly chopped cilantro for added color and flavor, then serve warm and enjoy!
