Description

Delight in these elegant Blueberry Pastry Rings filled with sweet blueberry preserves and topped with a smooth, luscious vanilla cream. Made with flaky puff pastry, these rings are baked to golden perfection and garnished with fresh blueberries and a dusting of powdered sugar for a perfect balance of textures and flavors. Perfect for breakfast, brunch, or a light dessert.

Ingredients

Scale

For the Pastry:

  • 1 sheet puff pastry, thawed
  • ½ cup blueberry preserves or pie filling
  • 1 egg, beaten (for egg wash)

For the Vanilla Cream:

  • ½ cup cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or cream, to adjust consistency

For Topping:

  • Powdered sugar, for dusting (optional)
  • Fresh blueberries (optional)

Instructions

  1. Prepare the Vanilla Cream: In a medium bowl, beat together softened cream cheese, powdered sugar, vanilla extract, and gradually add milk or cream until the mixture is smooth and pipeable. Cover and chill until ready to use.
  2. Prepare the Pastry Rings: Preheat your oven to 375°F (190°C). On a lightly floured surface, unroll the thawed puff pastry and cut it into 8 equal strips. Shape each strip into a ring by looping it and pinching the ends firmly to seal. Arrange the rings onto a baking sheet lined with parchment paper.
  3. Add Filling: Spoon a small dollop of blueberry preserves into the center of each pastry ring. Using a brush, apply the beaten egg wash to the edges of each ring to help them brown beautifully.
  4. Bake: Place the baking sheet in the preheated oven and bake the pastry rings for 18–20 minutes, or until they have puffed up and turned golden brown. Once baked, transfer them to a wire rack to cool slightly.
  5. Add Vanilla Cream: Once the rings have cooled enough to handle, pipe the chilled vanilla cream over each ring or fill the center with it. If desired, place fresh blueberries on top for added flavor and decoration.
  6. Serve: Just before serving, dust the pastry rings lightly with powdered sugar for an elegant finish. Enjoy them warm or at room temperature.

Notes

  • Make sure the puff pastry is fully thawed before working with it to avoid cracking.
  • The vanilla cream can be prepared a day ahead and stored in the refrigerator.
  • Use fresh blueberries for a burst of freshness and additional color contrast.
  • For a vegan alternative, replace cream cheese with vegan cream cheese and use a plant-based puff pastry.
  • Adjust the amount of milk or cream in the vanilla cream to achieve your desired piping consistency.
