These Buffalo Chicken Sliders are a flavorful and easy-to-make appetizer or snack featuring tender poached chicken tossed in a spicy homemade Buffalo sauce, served on soft brioche slider buns with crisp romaine lettuce and a tangy blue cheese spread.

Chicken and Broth
- 2 lbs boneless, skinless chicken breasts
- 2 cups chicken stock
- 2 cups water
- 1 tsp kosher salt
Sliders and Toppings
- 18 slider buns, preferably brioche
- 3 cups romaine lettuce, shredded
Buffalo Sauce
- 4 oz unsalted butter, melted (1 stick)
- 1½ Tbsp light brown sugar
- 1 tsp garlic salt
- 1 tsp sweet paprika
- 2 tsp white vinegar
- ½ cup Franks RedHot Sauce
- 2 Tbsp sriracha sauce
- Salt and pepper to taste
Blue Cheese Spread
- ½ cup crumbled blue cheese
- ¼ cup creme fraiche
- ⅓ cup mayonnaise
- 2 Tbsp buttermilk
Instructions
- Poach the Chicken: Place the chicken breasts, chicken stock, water, and kosher salt in a large covered saucepan. Bring the mixture to a simmer, then reduce the heat to maintain a bare simmer. Cook the chicken until fully cooked through, about 20 minutes.
- Shred the Chicken: Remove the cooked chicken to a plate and let it cool enough to handle. Using two forks or your hands, pull the chicken apart into shreds.
- Make the Buffalo Sauce: In a medium saucepan, whisk together melted butter, light brown sugar, garlic salt, sweet paprika, white vinegar, Franks RedHot Sauce, sriracha sauce, and salt and pepper. Bring the mixture to a boil, then reduce to a simmer and cook for 2-3 minutes. Remove from heat and set aside.
- Prepare Blue Cheese Spread: In a bowl, whisk together crumbled blue cheese, creme fraiche, mayonnaise, and buttermilk until smooth and creamy. Set aside.
- Combine Chicken with Buffalo Sauce: Add the shredded chicken to the Buffalo sauce in the saucepan. Cover and simmer over low heat for 20 minutes to allow the flavors to meld.
- Assemble Sliders: Split the slider buns and layer the bottom buns with shredded romaine lettuce. Top with a generous portion of the buffalo chicken mixture. Spread a dollop of the blue cheese spread on the top bun, then close the slider and serve immediately.

- Use brioche slider buns for a rich, buttery flavor that complements the spicy chicken.
- The blue cheese spread can be made ahead and refrigerated for up to 2 days.
- Adjust the amount of hot sauce if you prefer a milder or spicier slider.
- For extra crunch, add thin slices of celery inside the sliders.
