Caesar Dressing
- 1/3 cup extra virgin olive oil

- 1–2 cloves garlic, grated
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Caesar Pizza
- 2–3 cups chopped romaine lettuce
- 1 cup seasoned croutons
- 1/2 pound ball of pizza dough
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic, sliced or chopped
- Chili flakes to taste
- 1/2 cup cooked chicken, sliced or shredded
- 3/4 cup shredded mozzarella cheese
- 3/4 cup shredded provolone cheese
- 1 small Meyer lemon or regular lemon, thinly sliced
- 1/2 cup fresh basil leaves
Instructions
- Prepare the Caesar Dressing: In a glass jar, combine the extra virgin olive oil, mayo, lemon juice, Dijon mustard, Worcestershire sauce, grated garlic, and grated Parmesan. Season with salt and pepper to taste. Shake or whisk well until smooth.
- Toss Salad: In a bowl, toss the chopped romaine lettuce, seasoned croutons, and Parmesan cheese with the prepared Caesar dressing until evenly coated. Set aside.
- Preheat Oven and Roll Dough: Preheat your oven to 450°F (232°C). On a lightly floured surface, roll out the pizza dough into a thin 10-12 inch circle. Transfer the dough onto a baking sheet or pizza stone.
