Ingredients
Scale
For the Chicken:
- 2 pounds boneless chicken thighs, cut into cubes
- 2–3 chipotle peppers in adobo sauce (adjust for heat)
- 3 cloves garlic, minced
- Salt, to taste
- 1 teaspoon smoked paprika
- 1 teaspoon cumin powder
- 1 teaspoon onion powder
- 1–2 tablespoons lime juice
- 3 tablespoons olive oil
For the Wraps:
- 6 large tortilla wraps
- 1 cup Monterey Jack cheese, shredded (or mozzarella cheese)
- 1 small red onion, thinly sliced
- 1 cup bell peppers, chopped
- 2 cups romaine lettuce, shredded
For the Chipotle Lime Yogurt Sauce:
- 6 tablespoons Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 tablespoon reserved adobo sauce (adjust for spice level)
- 1 tablespoon fresh cilantro, chopped
Instructions
- Marinate the Chicken: In a large bowl, combine the cubed chicken thighs with minced garlic, smoked paprika, cumin powder, onion powder, lime juice, and salt. Add finely chopped or pureed chipotle peppers in adobo sauce according to your heat preference. Drizzle in olive oil and mix thoroughly to coat the chicken evenly. Allow to marinate for 10-15 minutes to absorb all the flavors.
- Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken pieces. Cook while stirring occasionally until the chicken is browned all over and cooked through, about 8-10 minutes. Remove the skillet from heat and set the chicken aside.
- Prepare the Chipotle Lime Yogurt Sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, garlic powder, reserved adobo sauce, salt, pepper, and chopped cilantro. Taste and adjust seasoning or spiciness as needed to complement the wraps.
- Assemble the Wraps: Lay each tortilla wrap flat on a clean surface. Start layering with shredded romaine lettuce, a generous portion of the cooked chipotle chicken, sliced red onion, chopped bell peppers, and shredded cheese. Drizzle a good amount of the chipotle lime yogurt sauce evenly over the filling.
- Roll the Wraps: Fold the sides of the tortilla over the fillings and roll tightly from one end to the other to enclose all ingredients securely, forming a neat wrap.
- Serve: Enjoy immediately while warm and fresh, or wrap tightly in foil for an easy on-the-go meal option.
Notes
- Adjust chipotle peppers in adobo sauce according to your preferred spice level.

- Cheese can be substituted with a dairy-free alternative for lactose intolerance.
- Wraps can be warmed briefly in a skillet or oven for a toasted effect.
- Leftovers should be stored in the refrigerator and consumed within 2 days.
