Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Prepare a medium baking dish; there’s no need to line it.
- Add Tomatoes and Chicken: Place the Roma tomatoes and cubed chicken breast into the baking dish.
- Season the Chicken: Sprinkle the chicken with salt, dried thyme, garlic powder, onion powder, chicken seasoning, dried chili flakes (if using), and cayenne pepper (if using). Drizzle 1 to 2 tablespoons of olive oil over everything and toss gently to coat evenly.
- Place Feta:** Create a space in the center of the baking dish and set the block of feta cheese there.
- Drizzle Olive Oil: Generously drizzle olive oil over the entire dish for moisture and flavor.
- Bake: Bake uncovered for 30 to 40 minutes until the chicken is cooked through and the tomatoes are softened.
- Cook Pasta: While baking, cook the pasta in salted boiling water according to package instructions (about 10 to 12 minutes).
- Drain Pasta: Drain the pasta and set aside, reserving a splash of the pasta cooking water.
- Mash Feta and Tomatoes: Once out of the oven, mash the baked feta and tomatoes together with a fork or spoon to create a creamy, saucy base.
- Combine Pasta and Sauce: Add the cooked pasta to the baking dish and stir well to coat. Use reserved pasta water to loosen the sauce if needed.
