Instructions

  1. Marinate the Chicken: Cut the chicken into bite-sized cubes and place them in a medium bowl. Drizzle over 1 tsp olive oil, red wine vinegar, 1 tsp paprika, and sprinkle half of the oregano, thyme, and chili flakes. Add salt and pepper, then mix well to coat the chicken evenly. Let it sit briefly to absorb the flavors.
  2. Sear the Chicken: Heat a large skillet or frying pan over medium-high heat. Add the marinated chicken in batches to avoid overcrowding, cooking each batch until the pieces are seared golden brown on both sides. Remove the chicken from the pan and set aside.
  3. Sauté Onion and Garlic: In the same pan, add 1 tbsp olive oil if needed, then add the finely chopped onion and crushed garlic. Cook for 2-3 minutes until the onion is softened and fragrant.
  4. Add Spices and Deglaze: Add the remaining paprika, oregano, thyme, and chili flakes to the pan. Stir to combine and toast the spices for a minute.
