Chicken and Sauce

  • 1.5 pounds chicken breast, boneless and skinless
  • 3 cloves garlic, chopped or left whole
  • 10.5 ounces cream of chicken soup
  • ¾ cup chicken stock
  • 4 ounces cream cheese
  • ¼ cup butter
  • 0.6 ounces Italian dressing mix (dry powdered, e.g., Good Seasons)

  • 1 pound angel hair pasta

Instructions

  1. Prepare the Crockpot: Spray the inside of the crockpot with nonstick cooking spray to prevent sticking and make cleanup easier.
  2. Add Chicken and Garlic: Place the boneless, skinless chicken breasts in the crockpot along with the chopped or whole garlic cloves.
  3. Soften Butter and Cream Cheese: Soften the butter and cream cheese in the microwave until pliable and easy to whisk.
  4. Make Creamy Sauce: Whisk the softened butter and cream cheese together until smooth. Then whisk in the undiluted cream of chicken soup.
  5. Mix in Seasoning and Stock: Add the dry Italian dressing mix and chicken stock to the cream mixture. Whisk thoroughly until well combined.
  6. Combine with Chicken: Pour the creamy mixture evenly over the chicken breasts in the crockpot.
  7. Cook Low and Slow: Cover the crockpot and cook on low for 6 to 8 hours to allow the chicken to become tender and infused with flavors.
  8. Shred Chicken (Optional): About 30 minutes before cooking ends, shred the chicken breasts using two forks if desired, then continue cooking in the sauce to absorb more flavor.
  9. Cook Pasta: Just before the chicken finishes cooking, prepare the angel hair pasta according to package instructions. Drain well.
  10. Serve: Plate the cooked pasta and serve the creamy chicken mixture over it for a comforting meal.

Notes

  • Storage: Store leftovers in an airtight container or covered with plastic wrap in the refrigerator for up to three days. This recipe does not freeze well.
