Description

This Crockpot Pierogi Casserole with Kielbasa is a comforting and easy-to-make dish perfect for a hearty meal. Layers of frozen pierogi, savory kielbasa, onions, and creamy mushroom soup are slow-cooked to tender perfection in a crockpot and topped with melted cheddar cheese and fresh chives for a delicious finish.

Ingredients

Scale

Ingredients

  • 1 package (16 oz) frozen pierogi
  • 1 pound kielbasa, sliced
  • 1 cup sour cream
  • 1 onion, chopped
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/4 cup butter, melted
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Prepare Crockpot: Spray the inside of the crockpot with non-stick cooking spray to prevent sticking during cooking.
  2. First Layer: Place half of the frozen pierogi evenly at the bottom of the crockpot to form the base layer.
  3. Add Kielbasa and Onion: Spread half of the sliced kielbasa and half of the chopped onions over the pierogi layer.
  4. Mix Sauce: In a bowl, combine the condensed cream of mushroom soup, sour cream, and melted butter, stirring until smooth and well blended.
  5. Spread Sauce: Evenly spread half of the sauce mixture over the kielbasa and pierogi layer to add creaminess and flavor.
  6. Repeat Layers: Add the remaining pierogi, sliced kielbasa, and chopped onion on top. Then spread the remaining sauce mixture evenly over the top.
  7. Slow Cook: Cover the crockpot and cook on low heat for 4 to 5 hours, or until the pierogi are tender and flavors have melded together.
  8. Add Cheese: Thirty minutes before the end of cooking, sprinkle the shredded cheddar cheese over the top to melt and create a cheesy crust.
  9. Serve: Once cooked, serve the casserole warm, garnished with freshly chopped chives for a pop of color and flavor.

Notes

  • For added texture, consider sautéing the onions before layering to deepen their flavor.
  • You can substitute kielbasa with smoked sausage or bratwurst if preferred.
  • If you want a lower-fat version, use light sour cream and reduced-fat cheddar cheese.
  • Make sure to spray the crockpot well to avoid sticking and make cleanup easier.
  • This recipe can be doubled for a larger crowd by using a larger crockpot or cooking in two batches.
