Ingredients

Scale

Lasagna Base

  • 12 lasagna noodles (regular or oven-ready)

Shrimp Scampi

  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Cheese Mixture

  • 1 ½ cups heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cups mozzarella cheese, shredded
  • 1 cup ricotta cheese

Instructions

  1. Prepare the Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside. If using oven-ready noodles, this step can be skipped.
  2. Cook the Shrimp: In a large skillet, heat 2 tablespoons of butter and olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the shrimp, salt, black pepper, and red pepper flakes if using. Cook shrimp until pink and opaque, approximately 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  3. Prepare Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Pour in the lemon juice and heavy cream, stirring to combine. Bring the mixture to a simmer and let it thicken slightly, about 3-5 minutes.
  4. Combine Cheese and Parsley: In a bowl, mix ricotta cheese, half of the Parmesan cheese, and half of the chopped parsley until well combined.
  5. Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of the garlic butter cream sauce. Layer 4 lasagna noodles over the sauce. Spread a portion of the ricotta cheese mixture, then add some cooked shrimp, followed by a sprinkle of mozzarella cheese. Repeat this process two more times, finishing with a layer of noodles topped with the remaining sauce, mozzarella, and Parmesan cheese.
  6. Bake the Lasagna: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake an additional 10 minutes until the cheese is bubbly and golden brown.
  7. Garnish and Serve: Let the lasagna rest for 10 minutes before slicing. Garnish with the remaining fresh parsley before serving.

Notes

  • Oven-ready noodles can simplify the preparation by skipping the boiling step.
  • For a spicier dish, increase the red pepper flakes or add fresh chopped chili.
  • Freshly grated Parmesan cheese provides the best flavor compared to pre-grated options.
  • Leftover lasagna can be stored in the refrigerator for up to 3 days or frozen for longer storage.
  • Adjust salt and pepper to taste, especially considering the saltiness of the cheeses used.
