Ingredients
Scale
Lasagna Base
- 12 lasagna noodles (regular or oven-ready)
Shrimp Scampi
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter, divided
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Cheese Mixture
- 1 ½ cups heavy cream
- 1 cup Parmesan cheese, grated
- 2 cups mozzarella cheese, shredded
- 1 cup ricotta cheese
Instructions
- Prepare the Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside. If using oven-ready noodles, this step can be skipped.
- Cook the Shrimp: In a large skillet, heat 2 tablespoons of butter and olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the shrimp, salt, black pepper, and red pepper flakes if using. Cook shrimp until pink and opaque, approximately 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- Prepare Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Pour in the lemon juice and heavy cream, stirring to combine. Bring the mixture to a simmer and let it thicken slightly, about 3-5 minutes.
- Combine Cheese and Parsley: In a bowl, mix ricotta cheese, half of the Parmesan cheese, and half of the chopped parsley until well combined.
- Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of the garlic butter cream sauce. Layer 4 lasagna noodles over the sauce. Spread a portion of the ricotta cheese mixture, then add some cooked shrimp, followed by a sprinkle of mozzarella cheese. Repeat this process two more times, finishing with a layer of noodles topped with the remaining sauce, mozzarella, and Parmesan cheese.
- Bake the Lasagna: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake an additional 10 minutes until the cheese is bubbly and golden brown.
- Garnish and Serve: Let the lasagna rest for 10 minutes before slicing. Garnish with the remaining fresh parsley before serving.
Notes
- Oven-ready noodles can simplify the preparation by skipping the boiling step.
- For a spicier dish, increase the red pepper flakes or add fresh chopped chili.
- Freshly grated Parmesan cheese provides the best flavor compared to pre-grated options.
- Leftover lasagna can be stored in the refrigerator for up to 3 days or frozen for longer storage.
- Adjust salt and pepper to taste, especially considering the saltiness of the cheeses used.
