Ingredients

Scale

Fats and Oils

  • 1 tbsp olive oil
  • 4 tbsp unsalted butter divided (½ stick)

Vegetables and Herbs

  • 1 lb Yukon Gold potatoes, diced into ½-inch cubes
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • Freshly chopped parsley, optional for garnish

Meat

  • lbs sirloin steak, cut into 1-inch cubes (or beef tenderloin, NY strip steak, or stir fry meat)

Seasonings

  • ½ tsp kosher salt
  • ½ tsp ground black pepper

Instructions

  1. Prepare the skillet and fat: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of unsalted butter. Allow the butter to melt completely to create a flavorful base for cooking.
  2. Cook the potatoes with herbs: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground black pepper to the skillet. Cook for approximately 4 minutes without stirring to develop a golden crust. Then stir and cook an additional 3-4 minutes until the potatoes are fork tender. Remove the potatoes from the skillet and place them in a bowl to set aside.
  3. Sear the steak bites: Return the empty skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of unsalted butter and stir until melted. Add the steak cubes in a single layer, cooking them for 1 minute before flipping or stirring. Continue cooking for an additional 1-2 minutes to reach your desired level of doneness. Remove the skillet from the heat.
  4. Combine potatoes and steak: Add the cooked potatoes back into the skillet with the seared steak bites. Toss gently to combine, coating all pieces in the garlic butter sauce. Season with additional salt and pepper if needed.
  5. Garnish and serve: Sprinkle freshly chopped parsley over the dish for a burst of color and freshness. Serve immediately and enjoy this hearty and flavorful garlic butter steak and potatoes meal.

Notes

  • If the potatoes are not tender after 8 minutes and are browning too quickly, reduce the heat to medium-low, add 2 tablespoons of warm water, cover, and cook for another 3-4 minutes until the water evaporates.
  • Do not overcrowd the pan, as this will cause the potatoes and steak to cook unevenly or steam rather than sear.
  • Steak doneness internal temperature guide: rare 125-130°F, medium-rare 130-140°F, medium 140-150°F, medium-well 150-160°F, well-done 160-165°F.
