Description

This Instant Pot Ribs recipe offers tender, flavorful baby back or spare ribs cooked quickly under pressure, then finished under the broiler for a caramelized BBQ crust. The ribs are seasoned with a smoky, spicy dry rub and basted with tangy BBQ sauce, resulting in a delicious meal perfect for any occasion.

Ingredients

Scale

Ribs and Rub

  • 1 rack pork ribs
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper

For Cooking

  • 1 cup water
  • ½ cup BBQ sauce, plus more for serving

Instructions

  1. Prepare ribs: If the ribs have the thin white membrane on the back, remove it by sliding a butter knife underneath and using a paper towel to grip and pull it off.
  2. Make the dry rub: Combine paprika, garlic powder, onion powder, chili powder, salt, and black pepper in a small bowl. Rub this mixture evenly over both sides of the ribs.
  3. Set up Instant Pot: Pour 1 cup of water into the Instant Pot inner pot and place the metal trivet inside.
  4. Position the ribs: Stand the ribs upright on the trivet with the rib bones vertical; lean them against the pot side as needed. If the rack is whole, gently curve it to fit. Halved racks can touch each other.
  5. Pressure cook: Close the lid and seal the steam release valve. Set the Instant Pot to high pressure for 25 minutes for baby back ribs (35 minutes for spare ribs).
  6. Release pressure: After cooking, allow natural pressure release for 15 minutes, then quick-release any remaining pressure by carefully opening the valve. For spare ribs, allow a full natural release.
  7. Broil and glaze: Remove ribs and place on a foil-lined baking sheet. Brush with BBQ sauce and broil for 3–6 minutes until the sauce caramelizes and ribs brown, watching closely to prevent burning.
  8. Serve: Serve ribs hot with additional BBQ sauce on the side.

Notes

  • Removing the membrane helps ribs absorb the seasoning better and improves tenderness.
  • Use baby back ribs for quicker cooking; spare ribs require longer pressure cooking and natural release for best results.
  • Broiling time can vary by oven; watch carefully to avoid burning the BBQ sauce.
  • Leftover ribs can be reheated in the oven or sliced for sandwiches.
