Ribs and Rub
- 1 rack pork ribs
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 ½ teaspoons salt
- 1 teaspoon black pepper

- 1 cup water
- ½ cup BBQ sauce, plus more for serving
Instructions
- Prepare ribs: If the ribs have the thin white membrane on the back, remove it by sliding a butter knife underneath and using a paper towel to grip and pull it off.
- Make the dry rub: Combine paprika, garlic powder, onion powder, chili powder, salt, and black pepper in a small bowl. Rub this mixture evenly over both sides of the ribs.
- Set up Instant Pot: Pour 1 cup of water into the Instant Pot inner pot and place the metal trivet inside.
- Position the ribs: Stand the ribs upright on the trivet with the rib bones vertical; lean them against the pot side as needed. If the rack is whole, gently curve it to fit. Halved racks can touch each other.
- Pressure cook: Close the lid and seal the steam release valve. Set the Instant Pot to high pressure for 25 minutes for baby back ribs (35 minutes for spare ribs).
- Release pressure: After cooking, allow natural pressure release for 15 minutes, then quick-release any remaining pressure by carefully opening the valve. For spare ribs, allow a full natural release.
- Broil and glaze: Remove ribs and place on a foil-lined baking sheet. Brush with BBQ sauce and broil for 3–6 minutes until the sauce caramelizes and ribs brown, watching closely to prevent burning.
- Serve: Serve ribs hot with additional BBQ sauce on the side.
