Description

This refreshing Lime Cake recipe combines the zesty brightness of lime juice and JELLO gelatin mix with a moist white cake base. Topped with a creamy lime-flavored frosting made from butter, cream cheese, and powdered sugar, this cake is perfect for gatherings or a citrusy dessert treat.

Ingredients

Scale

Cake:

  • 1 (15.25-ounce) box white cake mix, plus ingredients required on the box (usually eggs, oil, and water)
  • 1 lime, juiced
  • 1 (3-ounce) box lime JELLO gelatin mix

Frosting:

  • ¼ cup butter, softened
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice (more if desired for stronger citrus flavor)
  • A few teaspoons lime zest
  • 12 tablespoons milk

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cake evenly.
  2. Mix Dry Ingredients: In a medium bowl, combine the white cake mix and lime JELLO gelatin mix thoroughly.
  3. Add Wet Ingredients: Add the additional ingredients listed on the cake mix box as well as the juice of one lime to the bowl. Beat all together until the batter is smooth and well combined.
  4. Bake the Cake: Pour the batter into a greased 11×16 inch baking pan and bake in the preheated oven for 20-22 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before frosting.
  5. Prepare Frosting: While the cake cools, cream the softened butter and cream cheese together until smooth. Gradually add powdered sugar, then mix in vanilla extract, lime juice, lime zest, and milk. Beat until the frosting is creamy and spreadable.
  6. Frost and Serve: Spread the lime frosting evenly over the cooled cake. Slice and enjoy your bright and tangy lime cake!

Notes

  • For a stronger lime flavor, increase lime juice in both the batter and frosting according to taste.
  • Make sure the cake is fully cooled before frosting to prevent melting.
  • If you want a thicker frosting, reduce the milk quantity or add more powdered sugar.
  • This cake can be stored covered at room temperature for 2 days or refrigerated up to 5 days.
  • You can also add a teaspoon of lime zest to the cake batter for an extra citrus note.
