Crepe Batter

  • 1 1/4 cup whole milk

  • 220 g heavy whipping cream
  • 20 g sugar
  • 2 fresh mangoes, cubed

Instructions

  1. Prepare the batter: In a clean mixing bowl, combine the milk, sugar, vanilla, and eggs. Whisk thoroughly until the mixture is smooth.
  2. Add dry and melted ingredients: Gradually add the flour and melted butter to the wet ingredients, mixing well until the batter is fully combined and smooth.
  3. Cook the crepes: Heat a clean pan over medium heat and add a cube of butter. Pour about 1/3 cup of the crepe batter into the pan, spreading it evenly. Cook for 1-2 minutes on the first side until lightly golden, then flip and cook for another minute. Set aside the cooked crepe and repeat until all the batter is used.
  4. Whip the cream: In a separate bowl, combine cold heavy whipping cream and sugar. Using an electric mixer, whip until stiff peaks form. Transfer the whipped cream into a piping bag for easier spreading.
  5. Assemble the crepe roll: Lay three crepes on a baking mat. Spread a generous layer of whipped cream over the crepes, then evenly distribute the cubed fresh mangoes on top.
  6. Roll the crepes: Fold in the edges of the crepes gently and carefully roll them up into a tight crepe roll.
  7. Chill and serve: Place the rolled crepe in the refrigerator for at least 30 minutes to set. Once chilled, slice and serve chilled for best flavor.
