Description

Mississippi Mud Chicken is a rich and creamy baked dish featuring tender cubed chicken breast seared to golden perfection, smothered in a luscious sauce made from cream of chicken soup, sour cream, and ranch seasoning. Topped with sharp cheddar cheese, crispy bacon, and fresh green onions, this comforting casserole offers a perfect balance of savory flavors and satisfying textures—a delicious meal perfect for family dinners or casual gatherings.

Ingredients

Scale

Chicken and Meat

  • 2 lbs Chicken Breast, cubed into bite-sized pieces (900g)
  • 8 slices Bacon, cooked crispy and crumbled (225g)

Sauce and Seasoning

  • 2 tbsp Olive Oil for searing (30ml)
  • 10.5 oz Cream of Chicken Soup, 1 can (298g)
  • 1 cup Sour Cream (240ml)
  • 1 packet Ranch Seasoning Mix (28g)

Toppings

  • 2 cups Sharp Cheddar Cheese, freshly shredded (200g)
  • 1/2 cup Green Onions, sliced (50g)

Instructions

  1. Cook Bacon: Fry bacon slices in a skillet over medium heat until they turn dark red-brown and crispy. Remove from the skillet, crumble them into small pieces, and set aside for topping later.
  2. Sear Chicken: Season the cubed chicken breast with salt and pepper. Heat olive oil in the same or a clean skillet over medium-high heat. Sear the chicken pieces until they develop a golden brown exterior, ensuring they are nicely caramelized but not fully cooked through. Then, transfer the chicken to a white ceramic baking dish.
  3. Prepare Sauce: In a mixing bowl, whisk together the cream of chicken soup, sour cream, and ranch seasoning mix until the mixture becomes a thick, pale-yellow sauce that is smooth and well combined.
  4. Assemble the Casserole: Pour the prepared sauce evenly over the seared chicken in the ceramic dish, ensuring all pieces are coated.
  5. Add Cheese and Bake: Sprinkle the freshly shredded sharp cheddar cheese generously on top. Place the baking dish in a preheated oven at 375°F (190°C) and bake for 20-25 minutes or until the cheese is melted, bubbly, and slightly golden.
  6. Finish with Bacon and Green Onions: Remove the dish from the oven and immediately top with the crumbled crispy bacon and freshly sliced green onions for added texture and flavor. Serve warm.

Notes

  • Use freshly shredded cheddar cheese for better melting and flavor compared to pre-shredded varieties.
  • For a spicy kick, add a pinch of cayenne pepper or chopped jalapeños to the sauce mixture.
  • This dish pairs well with a side of steamed vegetables or a crisp green salad for a balanced meal.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Ensure not to overcook the chicken during searing as it will continue cooking in the oven.
