  • 200 grams rice noodles
  • ¼ cup natural peanut butter
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon light soy sauce
  • 2 teaspoons dark soy sauce
  • 1.5 tablespoons brown sugar
  • ½ tablespoon rice wine vinegar
  • ¼ cup warm water

  • 2 tablespoons oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon ginger, minced
  • ½ teaspoon salt
  • ⅓ cup roasted salted peanuts, roughly crushed
  • ⅓ cup green onion, chopped for garnishing
  • Chili oil for topping (optional)

Instructions

  1. Prepare the Peanut Sauce: In a bowl, combine the creamy peanut butter, sriracha, light soy sauce, dark soy sauce, brown sugar, rice wine vinegar, and warm water. Mix thoroughly until the sauce is smooth and creamy, ensuring an even blend of spicy, sweet, and nutty flavors.
  2. Cook the Rice Noodles: Follow the package instructions to cook the rice noodles until tender. Once cooked, drain them well and set aside, keeping them warm for the next step.
  3. Sauté Aromatics: Heat the oil in a skillet over low heat. Add the minced garlic and ginger, sautéing gently for about 1 minute until the raw aroma fades without letting the garlic or ginger brown, to maintain their fresh flavors.
  4. Combine Noodles and Sauce: Add the cooked rice noodles into the skillet with the sautéed garlic and ginger. Pour the prepared peanut sauce over the noodles and season with salt. Toss gently to coat the noodles evenly; if the noodles absorb too much sauce and seem dry, add a couple of tablespoons of warm water to loosen the sauce and facilitate tossing.
  5. Serve and Garnish: Transfer the coated noodles onto serving plates. Top with roughly crushed roasted salted peanuts, sprinkle chopped green onions, and drizzle chili oil or extra sriracha on top if you prefer additional heat. Serve warm or at room temperature.
