Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F. Spray a 9×5-inch loaf pan with nonstick cooking spray and set aside.
  2. Sift Dry Ingredients: In a medium bowl, sift together 2 cups of flour, baking powder, baking soda, and salt to keep the bread light and airy.
  3. Mash Bananas: In a separate bowl, mash the ripe bananas with a fork until smooth, then set aside.
  4. Cream Butter and Sugar: Using a stand mixer with the paddle attachment, cream the softened butter and granulated sugar on medium-high speed for about 2 minutes, scraping down the sides as necessary to ensure even mixing.
  5. Add Egg: With the mixer on low speed, add the egg and mix until well combined.
